Consistency in end-use performance was the most desirable wheat quality characteristic, according to a survey conducted last year by the NDSU agricultural economics department of domestic millers and bakers
concentrated in hard red spring wheat market channels.
Other desirable end-use characteristics are ranked in order—with price fifth on the list. Millers indicated a willingness to pay a premium for higher protein content and extraction, while bakers were most willing to pay for increased water absorption.
