Domestic Marketing Facts

Bread by far is still the largest bakery product category in the U.S., but has declined from 1987 to 1997. Rolls and bagels increased the most, though the bagel craze has slowed in recent years.  Other bakery product categories have held steady or increased modestly

Consistency in end-use performance was the most desirable wheat quality characteristic, according to a survey conducted last year by the NDSU agricultural economics department of domestic millers and bakers concentrated in hard red spring wheat market channels. Other desirable end-use characteristics are ranked in order—with price fifth on the list.  Millers indicated a willingness to pay a premium for higher protein content and extraction, while bakers were most willing to pay for increased water absorption.
